The next best thing to come out of my innovative, creative, childlike, exceptional and motivational brain: “The Vedge Blueberry Cookie Muffin Thingy”. Title credits to my amazing partner @consciouslivingwithali, – she came up with that one all on her own). 

 We think you are really going to enjoy this. Using TVP, Oats and Vedge Nutrition Protein blended together to make this Blueberry Cookie Muffin Thingy and it turned out pretty darn good. AND with 67g of plant powered protein (no baby cows had to be stolen from their moms to make this bowl!)

Ingredients

  • 100 g of blueberries
  • 100 g of coconut yogurt
  • 60 g of oats
  • 60 g of Vedge protein powder ( Use code: TheBodybuildingVegan to save 15%)
  • 30 g of TVP (Textured Vegetable Protein, or as I call it, Top Vegan Protein)

 

Instructions

Step 1 

Start by placing your blender cup onto a food scale and pour water into the bottom of it. This will keep your ingredients from sticking to the bottom of the blender. weighing out your TVP.  

Step 2 

Add in your TVP and your oats. Using a food scale allows us to track our nutrition most accurately. 

Step 3 

Blend everything until it reaches a pancake batter-like consistency. If it’s too dry, add a little more water.

Step 4 

Add 60g of Vedge protein powder to increase the protein content and blend again. 

Step 5 

Once blended, add to a bowl.  Top with blueberries and Unsweetened Coconut Yogurt to cool it down. And add pumpkin pie spice, a pinch of salt, or any other spices you like. Mix everything until well combined and enjoy!

Why Frozen fruit?

If you’re not on the frozen fruit train yet, then choo choo, hop aboard. Frozen fruit is picked at peak ripeness, so it actually has more nutrients than the fruits you grab off a grocery store shelf. When you want the most ripe fruit, frozen is the way to go.
